Pomora Green Spaghetti Carbonara

Everyone know the famous Italian pasta dish of Carbonara from Rome made with spaghetti, eggs, cheese and bacon, the latter of which gives the recipe a lovely smoky flavour. What happens if you remove the bacon and replace it with smoked tofu, some greens and a peppery splash of Pomora extra virgin olive oil (from Campania)? You get a delicious dish, ready to eat in 25 minutes!


INGREDIENTS:

Ingredients to serve 2 people, takes 25 minutes:

150g spaghetti
80g smoked tofu, diced
1 courgette, grated
½ tsp smoked paprika + extra for sprinkling
100g baby spinach
1 tsp rapeseed oil
3 tbs Greek yogurt
1 garlic clove, crushed
2 tsp horseradish sauce
40g vegetarian Italian hard cheese or *Parmesan, grated
2 eggs
Chopped parsley to serve
Pomora extra virgin olive oil, drizzle
