Pomora Mixed Berry Crumble

The most comforting of comfort foods, crumble is as easy to make as it is delicious to eat. Add a gourmet twist to your crumble mix with some Pomora rosemary-flavoured olive oil.
Ingredients to serve 2 people:
2 tbsp Balsamic vinegar
30g Caster sugar
75g Plain flour
50g Golden demerara sugar
75g Porridge oats
2 tbsp Pomora rosemary olive oil
Put the water, balsamic vinegar and caster sugar into a pan and bring to boil. Add the fruit and reduce heat to simmer. Simmer until the liquid has reduced. Stir occasionally to ensure nothing sticks. Try not to stir too much so you don’t break the fruit down too much.
Combine all the ingredients for the crumble topping in a big bowl and rub together. You’re looking for the crumble to be the consistency of breadcrumbs so you may need to add a little more flour or butter to get to the right consistency.
Put the fruit in the bottom of a baking dish and then sprinkle the crumble on top. Bake in the oven for 20-25 minutes at 200 deg C until the crumble is golden.
Serve with some ice cream or custard.
