Pomora Winter Root Vegetable Salad

This delightful recipe was created by Pomora's friend Corrie at Rabbit Food - thank-you to them!  

As the leaves start to fall, we're not quite ready to start eat comforting winter food just yet.  That's why this winter root vegetable salad was perfect for the Autumn - and it uses Pomora Extra Virgin Olive Oil which is even better!


Ingredients to serve 2 people:

3 carrots
1 medium beetroot (I used a golden beetroot but a regular one will do fine)
1 medium cooking Apple
1 large sweet potato
4-5 sprigs of fresh thyme
Bag of lambs lettuce (60g)
100g soft goats cheese
1 Tbs sunflower or vegetable oil

2 Tsp Extra Virgin Pomora Olive Oil
1 Tsp apple cider vinegar
Sat and pepper
